Rick Stein at Coogee Beach

Pavlova is one of my favourites desserts, especially at my family Christmas lunch, but unfortunately this isn’t quite the soft marshmallow-like centred pavlova one would hope for and more a hard meringue that’s a challenge to break and eat with just a spoon.
